Healthy Bistro Box with Ghosts and Pumpkins

Adding a cute touch to you lunch is easy just by cutting cheese with mini cookie cutters. The eyes on the faces are made using straws!

Bistro boxes - those trendy little snack boxes are the THING right now, and I fully support that trend! I have been packing snack boxes full of protein, veggies, and healthy fats for years. I am a BIG fan of prepping my food ahead of time and packing it up to take with me  so I can stick tight to my healthy eating goals.

But why just throw some cheese cubes into your bistro box, when you can make them extra special for Halloween? All it takes is some little cookie cutters, some straws, and you've got some adorable little ghosts and jack-o-lanterns to snack on when you get hungry.  Oh, and there's my little mini bell pepper pumpkin, too - he kinds of looks like he was in a slasher movie, but that's okay, he will still taste good 🙂

What's For Lunch

This was my husband's lunch today (he doesn't mind eating my cute food). Here's what he took for lunch:

  • leftover chili - my Slow Cooker Meatless Chili recipe, which is what we ate for dinner last night
  • some Wasa Thins Sesame and Sea Salt crackers ( they came in our Degustabox this month)
  • grapes
  • a mini bell pepper, hollowed out like a pumpkin and stuffed with herbed cream cheese
  • cheese cut like ghosts and pumpkins

Tips & Tricks

It's so easy to use some mini cutters to add a fun Halloween touch to your lunches! Here's a look at how I made them:

  1. Slice cheese and cut out with mini cookie cutters and linzer cookie cutters (I'll show you where to get mine below)
  2. Use straws to cut out eyes and round mouths. I have several different sizes of straws, like coffee stirrers, smoothie straws, etc. I cut them into small sections - they are great for cutting out little details in food.
  3. Use any other small bento cutters to cut out details - in this case, I used a half-circle piece to cut out a smiling mouth.

Products I Used

The perfect bento box to use for a bistro box should be small enough for a snack and ideally have divided sections to keep moist foods away from the dry foods. Lunchbots has several really good ones, along with a great insulated thermos that I used for the chili. Here's where to find those:
