April Fool's Food!

Is it a taco salad - or ice cream? April Fool's!   😀

Every year for as long as I can remember I have been making trick food for my family for April Fool's Day - this year was no different. The unintentional theme this year was Ice Cream Sundaes. We had chicken sausages and potato salad disguised as a banana split...

Of course no one was actually fooled by that, but it was fun to eat! It had additional mashed potato on top for the "whipped cream" and a tiny tomato with a leaf pick for the cherry on top.

Then for dessert we had ice cream sundaes disguised as taco salads. Those looked a lot more convincing, and they were really fun to make! Here's some more pics:

Here's what they're made of:

taco shell = waffle cone bowl

refried beans/ ground beef = chocolate ice cream balls rolled in chopped pecans ( frozen the night before)

cheese = coconut tinted with yellow food color

lettuce = coconut tinted with green food color

tomatoes = chopped maraschino cherries

olives = sliced black licorice sticks

sour cream = frozen whipped topping

I actually made 2 gluten free waffle bowls for me and my son, but I forgot to take a picture 🙁

I can't take credit for these great ideas - they came from Taste of Home.  I saw a few ideas there that I might use next year too. Every year I think  " what on earth am I going to do THIS year" but I always manage to find something that works!

Today's food was pretty boring in comparison:

breakfast - breakfast fried rice: which is just cold cooked rice,  crumbled  ( cooked) low fat sausage, stir fried with a couple of egg whites

snack  - ½ green apple with protein peanut butter

lunch -  walnut chicken salad with cranberries, and whole grain ( gluten free) crackers and cucumbers

snack - plain greek yogurt with stevia and blueberries

dinner plans - we are getting pizza tonight - mine will be small and loaded with veggies and lean ham along with a big salad as an appetizer.
